Strawberry Tart Recipe

StrawberriesThey are the summer’s best-seller! This strawberry tart recipe is a great way to take advantage of their season! It’s just as tasty as it is beautiful, so let’s dig right in to how to make your own. The first thing we’ll start with is our buttery shortbread-esque tart crust. I make this tart using a food processor and recommend that you do the same because it’s the easiest way to make a tart crust. The food processor cuts in the butter and does not allow it to soften due to over-working. The result is golden and flaky without any fuss.

This delicious buttery crust is then covered with a cream cheese-based filling, and finally, sliced strawberries are added! It’s smooth, sweet, and complements the flavor of fresh strawberries perfectly! This strawberry tart is not only delicious but will also look beautiful on your dinner table! You and your guests will love it!

Ingredients required to make it

The great thing about this strawberry tart is that it uses so many simple ingredients, you won’t need to make a grocery trip! Below are the measurements for each of these ingredients.

Tart Crust

  • All-Purpose FlourAll-purpose flour is what I use for most of my baking. It is low in protein and makes baked goods lighter and more airy.
  • SugarI add white sugar to my crust to sweeten it.
  • SaltTo keep your crust from becoming bland, add a pinch of salt.
  • Butter: You’ll want to use cold butter for the crust! Lower temperatures make the crust flaky and crispy.

Cream Cheese Filling

  • Cream Cheese: The cream cheese is the base of the filling. It adds creaminess and tanginess to the dish.
  • Powdered sugar: Adds smooth sweetness to the tart filling.
  • Vanilla Extract: Enhances the flavor. Use pure vanilla extract if you can!
  • Salt: Increases the overall taste.
  • Heavy Cream: Your filling will be thick and fluffy
  • Strawberries: You’ll want these hulled and sliced.

How to Make a Strawberry Tart at Home

It is very easy to make a fruit tart. It is important to remember that the tart must be allowed to set and chill for a while. Allow your tart to set for a few hours before serving.

Making Your Crust

  1. Combine Ingredients: Mix flour, sugar, salt and pulse in a food processor until it is well combined.
  2. Butter is a good addition: Place butter pieces on top of the flour mixture. Pulse until mixture begins to stick together.
  3. Chill: Take out of food processor and shape into a disk. Wrap in plastic wrap, and let cool for 30 minutes.
  4. Shape: Once dough is finished chilling, remove from refrigerator and roll into about a 10-11″ circle. Form into a 9″ tart pan and use a fork to poke holes into the side and bottom of the dough.
  5. Freeze: Place pan in freezer. Freeze for at least 30 min.
  6. Bake: Pre-heat oven to 350F. Once dough is chilled and oven is preheated, bake at 350F for 25 minutes, or until the crust begins to turn golden brown. Let tart crust cool completely before filling.

Filling and topping

  1. Combine Ingredients: Mix cream cheese, powdered Sugar, Vanilla Extract, and Salt in a Bowl Mix the ingredients together with an electric mixer until they are smooth. Set aside.
  2. Add heavy cream Use an electric mixer to whip 1 cup of heavy cream into stiff peaks in a separate bowl.
  3. Fold: Fold the whipped cream into your cream cheese mixture until well-combined — the resulting mixture should be thick and fluffy.
  4. Add to Crust Spread evenly onto a tart crust.
  5. Serve with Strawberries Place sliced strawberries on top.

Tips to Make a Fruit Tart a Success

These are some simple tips to help your strawberry tart taste like it came straight from your favorite bakery.

  • Don’t Overwork Dough: Combine your ingredients only until combined. You should still see butter pieces. Overworking your dough can cause gluten to form and result in a hard, rubbery crust.
  • Let Your Crust Chill For the best crust, let your dough rest in the fridge for at least 30 minutes before you use it. This will allow the gluten to relax, making it easier to shape.
  • Use cold butter: How do you make a flaky crust? Cold butter is the key to a flaky crust! Chilled butter won’t incorporate into the crust completely. After the crust has been baked, the heat will melt the butter pieces and leave you with flaky, light goodness.

Storing Leftovers / Making Ahead

I don’t recommend making this strawberry tart ahead of time since we’re working with fresh fruit. You can store leftovers in the refrigerator for up to two days, covered with plastic wrap.

  • Take out of food processor and shape into a disk. Wrap in plastic wrap, and let cool for 30 minutes.

  • Once dough is finished chilling, remove from refrigerator and roll into about a 10-11″ circle. Form into a 9″ tart pan and use a fork to poke holes into the side and bottom of the dough.

  • You will need to whip 1 cup of heavy crème to stiff peaks using an electric mixer in a separate bowl.

  • Fold the whipped cream into your cream cheese mixture until well-combined — the resulting mixture should be thick and fluffy.

  • Spread evenly on cooled tart crust

  • Place sliced strawberries on top.
